Last night’s meal was a tried & tested thing that I make all the time; a chicken pasta bake. The good thing with this is that although I make this a lot, what’s in it tends to change because it depends what vegetables I have in the house.
This is really easy to make, is healthy and doesn’t take long at all and it’s enough to serve 4.
- 2 chicken breasts, diced
- 1 onion, finely chopped
- 1 or 2 cloves of garlic, crushed
- 1 tbsp. tomato puree
- 1 heaped tsp. of Chipotle paste
- 1 chicken oxo
- 1 tin chopped tomatoes
- Diced vegetables – for this one I used 3 sticks of celery and one large courgette. In the past I have also used a selection of sliced peppers, broccoli cut into bite-sized florets, diced butternut squash, and spinach.
Fry the onion in some olive oil until softened then add the garlic and fry for a further couple of minutes. Add the celery and let soften slightly.
Add the tomato puree and Chipotle paste. Mix and fry for a further 2-3 mins.
Add any other vegetables you have and fry for a further 3-4 mins.
Add the chicken to the pan and stir thoroughly. Crumble the chicken oxo over the mixture and season with salt and black pepper. Throw in the tinned tomatoes. Stir and let simmer for around 15 mins.
Meanwhile you’ll need to cook this
Once the pasta is al dente, add to the pan – always the pasta to the sauce – never the other way around!
Mix and then put into a baking dish. At this point you can leave as is before baking, or if you like you can dot mozzarella into the dish. I didn’t have any mozzarella so it got baked as is
Bake for 25-30 mins. The sides of the pasta will go nice and crispy. Serve with more black pepper and Parmesan.
This always gets the thumbs up from the boyf and it’s so easy to make I pretty much make it weekly.
I also made some soft pretzels yesterday which turned out really well!
I found the recipe on Pinterest which was from a blog called Sprinkle Some Sugar: I can’t believe how easy they were to make! Soft pretzels aren’t the easiest thing to find in the UK and I love them so I’m glad I can make them whenever I want them 🙂
