We don’t usually do anything super-extravagant for Valentine’s Day but we try and have a nice meal and exchange cards and that.
My Boyf got me a gorgeous card and some chocolates and a candle (that I won’t be lighting anytime soon because it’s too cute!)
The Boyf loved the card I made for him and his gift from me was a special meal that I cooked for him.
He had a hospital appointment earlier in the day that had required him not to eat for 24 hours so by the time it came to Valentine’s Evening he was starving! This made the meal even better I think though he probably would have eaten fish fingers and chips had I served that up!
Luckily for both of us, we didn’t have fish fingers; We had fillet steak, dauphinoise potatoes, roasted tomatoes and steamed french beans with a red wine jus.
There was a LOT of chopping potatoes, a LOAD of cream and not so much red wine in the jus which left plenty to drink with the meal! We also had a nice bottle of Prosecco. Gotta have the fizz with a posh meal 🙂
For dessert, we had raspberries, creme fraiche, crushed meringue drizzled with melted white chocolate.
My Boyf LOVED the meal (and I’ll be honest, it was amazingly tasty if I do say so myself!). This morning he sent me a message from work saying he’d eat it all again.
I really enjoyed cooking it which was good because I’ve really struggled getting back into my cooking. It was always something I enjoyed but due to my current issues, had lost the passion for it. Hopefully this has kick-started something and I can get back to cooking healthy and tasty meals again. Chicken Pasta Bake for tonight!
